Q: What inspired you to start your own business?
Ever since college I have always been fascinated by the culinary arts. Right out of college it wasn’t the right time to try to open one, but I now have been in the restaurant industry for eight years and own five restaurants, including four Spice House Restaurants in metro-Atlanta and now Palm 78. Also, family is very important to me, and I’ve been blessed to be married 20 years and also have two daughters.
Q:What do you love most about opening Palm 78? I love that we were extremely intentional in designing the dining experience at Palm 78—from the tropical-infused dishes created by Chef Ed and our wine selections and creatively mixed craft cocktails by our beverage director, to the elegant and relaxing décor and exemplary customer service. I also love the fact that I am not only creating opportunities for myself, but for others who have the skill and experience to excel in the restaurant industry, like our General Manager, Louis Williams; our Executive Chef, Ed Williams and other staff members who want to learn and grow in the business. In addition, I love the opportunity of meeting the challenge of showing we belong in the fine dining arena.

Q: Aside from being a Co Owner of Palm 78 what other profession do you practice? I’m an injury lawyer by trade. I’ve operated my law firm for over 15 years and practiced law for 18 years.
Q: How long have you been in the restaurant business? This is my first venture into the restaurant business with Palm 78.
Q: What was the initial spark that made you open your restaurant? I’ve always been an avid fisherman. I’ve fished all over the world for years and I’ve always had a desire to open a seafood restaurant.
Q: As the Co-Owner of Palm 78, what is your role? I’ve handled most of the compliance, permitting and risk management. Also, as a new restaurant I play a part in every aspect of operation from staffing to marketing to menu.

Q: What’s been the most memorable client that your company has served? A family came by to support us and they ordered a little bit of everything. They were so impressed with the presentation that they took pictures of all of their dishes. They also marveled the flavor of a couple of our choice selections like the Braised Short Rib a client favorite.
