ABOUT ALEX FIACCO
Executive Chef Alessandro is 36 years old. He was born in Ciociaria with a passion for cooking. His journey started very early. Still too small to reach the stove, he was standing on a stool trying to reproduce home recipes and he loved cooking for his family and himself. Flavors, aromas, and ingredients have captured him to the point that his passion had to morph into his future profession. One can ask his relatives and childhood friends, they will reply that “yes, Alessandro’s place has always been the kitchen,” therefore, during his teen years he attended the Professional Hotel Institut, and, right afterward, he was ready to begin.
He started as an assistant cook. His first experience, at just 16 years of age, was in Trentino Alto Adige, in a town called Folgaria. At the end of the winter season, he moved to Savona, working in a restaurant on the Ligurian Sea. These were years of intense training, after which, he returned to his birth-region and refined his skills in various luxury hotels. At first he ventured in Fiuggi, a renown thermal luxury site, where he met his current managers, who are also his closest collaborators and great friends, and then he moved to the capital, Rome, where he had the opportunity to work for many years in a 4-Star Superior Hotel and to collaborate with numerous restaurants both in Rome and in Ciociaria.

The most important skill is organization, because having a good work organization simplifies everything. The second important skill is not having anxiety and always being calm even in the most critical moments. And then the third skill you need to have is managing everything staff in the best possible way because it is the team that makes the strength.
